Vegetarian French Toast (Serves 6)
Ingredients

3/4 cup water
6 pitted dates
2 tablespoons clean, raw cashews or sunflower seeds
3/4 cup orange juice
1 tablespoon whole wheat flour
1 dozen slices whole wheat bread (Honey Whole Wheat)

 

Cooking Directions


Using a blender, process dates and cashews in about half of the water until very smooth.  Add juice, flour, and remaining water and continue blending until smooth.  Pour into a shallow bowl.  Dip bread slices into batter and place on a sprayed cookie sheet.  Bake at 400 degrees F until golden brown.  Turn and brown on other side.  May also be browned in a skillet.  
Top with applesauce, fresh fruit, or fruit topping, if desired.  For variation, blend in a banana.
